In 2012, I gave birth to my last child. Unbeknownst to me I suffered heart trauma from a severe case of hypertension. Lying in cardiac ICU for two and a half weeks going through procedure after procedure I finally asked my doctor, "What could I have done to prevent this doc?" He looked at me and merely stated, "Changed your diet." It left me stunned and dissappointed in myself. How could I let something like this happen to me when I've been trained to be and expert at nutritional food consumption?
That's when I started my journey to being a healthier chef. I plan to touch everyone that I am able to through my food offerings. So yes we still enjoy our favorite southern classic dishes, but we enjoy them in a more health conscious way.
